DeLonghi’s Hot Fryer / Multicooker Extra Chef Plus FH 1396 is indeed very versatile and that’s its big plus: baking works very well, frying with really little oil too (with some help). When frying and grilling, however, we would have in our test unusually thick pieces in the pan or on the grid must, so no disappointment arises. Some dishes are perfect, others leave something to be desired. The noise of the device is tolerable for short use, but who prepares many dishes in a row, longing for heavenly peace after the cooking orgy. Also, an illumination of the cooking chamber would be desirable so that the processes can be monitored even better.

The Hot Air Deep Fryer multifunction kitchen appliances are among the recent inventions of the device manufacturer. One of the many cited benefits: “With a minimum of fat, you can prepare crispy chips and do all sorts of other preparation tasks, depending on the model.” That sounds good! However, every potential fan should keep in mind that a device like the Multifry Extra Chef Plus FH 1396 by DeLonghi does not make the standard kitchen equipment superfluous and always needs space in the kitchen as an additional device.

The manufacturer’s so-called multi-cooker comes with lush dimensions, therefore: barely 40 cm high, and 33 cm wide he is at least 29 cm deep. The large dimensions have the advantage that the two contained in the set, with a ceramic non-stick sealed container, provide a lot of volumes. Up to 1.7 kilos of freshly cut potato pencils they can take, according to the manufacturer. In one of the two dishwasher-safe bowls rotates a stirring element, which is to ensure a steady and uniform circulation of the food (such as French fries, meat or vegetables). The other container has a flat bottom and is intended for baking or grilling, for example. A low grill belongs to the set as well as a small measuring cup and a short recipe book. There is also a link to more than 300 recipes online.
Two heaters in the lid (1400 watts) and in the ground (1000 watts) to generate the required heat. The is distributed by a fan in the lid as circulating air evenly in the cooking chamber. On the front of the device you will find the clearly arranged controls: a rotary selector switch for program selection with start/stop function as well as a timer and a button for the four power levels.
Five pre-installed programs are available: fries, pizza, cake, stew, grill. The parameters can be individually adjusted. There are also three semi-automatic programs called oven, air grill and pan. The removable and hinged plastic lid is largely transparent. The power cable is 100 cm long enough, the device has a separate on / off switch and stands thanks to rubber feet on smooth surfaces.
Now we’ll throw the machine!
First, we try the function “baking”. In the recipe book can be found on page 102/103 a delicious-looking yogurt apple cake. But its main ingredient is sugar. No matter. Stir the eggs and sugar with the hand mixer until frothy, add the remaining ingredients to the bowl and then pour the mixture into the standard container from which we have removed the stirrer. According to the manufacturer, the other bowl would be more suitable, but this should work as well. Program selector switch to “cake” in combination with power level 2 and 35 minutes in the timer. The device begins to hum moderately loud and to noise, the noise is still bearable.
After the specified time, a beep signals the end of the cooking time: The browning on the top is good if not quite even and after a short cooling time, the exciting moment comes: The cake must be dropped from the more than 10 centimeters deep shape. Works. The cake is completely cooked and tastes. Although sweet enough.
Frozen pizza test
Sometimes just missing the time to make a pizza yourself. The dough and the preparation just take too long. Luckily, today there are amazingly tasty frozen products! The corresponding program is chosen, at level 2 the pizza should be hot and crispy in 30 minutes. In the oven, it only takes half as long, but that’s where the heating phase comes in. Nevertheless, 30 minutes seem very long to me, I manually correct to 25. When it beeps the pizza looks very good. Crisp and evenly browned. But how does the thing get out of shape? Falling is not an option here. Although theoretically, would not look good on the plate. With a long, narrow and flexible plastic spatula, you get under the pizza base to lift the dough out with it. But without a certain dexterity, this does not work accident-free. The pizza is very well cooked.
French fries and TK
Self-cut fries are a challenge that does not always succeed. Not only potato variety plays a big role here, but also the preparation, the fat and the cooking process. So many parameters where something can go wrong. We try it with Italian new potato with a beautiful, elongated initial shape. The chips are cut into pens of the same size, rinsed and dried. With only 20 ml of oil, around 600 grams of potato pods are expected to produce tasty chips in 32 minutes at level 3 in the potato program, thoroughly circulated by the stirring element. The apparatus rushes to itself, the Frittenstifte but usually pushes the mixing arm just in front of her, rather than through them. Is that due to the shape of the fries or the oil? Anyway, I open the lid several times, To turn the potato pencils with a wooden spatula, which is essential for an even tan. After several uses, the signal beeps “ready” and in fact, the result now looks passable. Sometimes the potatoes are still a bit soft, but that can have many reasons.
My favorite frozen chips look much better on this machine than on the oven. And they taste better. However, there was the sliding effect of the paddle and I had to help manually for a good result.
Chicken with pineapple
Numerous small-cut cubes to grind chicken meat at the same time succeed even in a pan barely. A lot of water escapes quickly and this has to evaporate before the roasting process can begin. That’s why I’m especially curious to see how this device handles the challenge. After all, I should use 800 grams of meat according to the recipe. I take only about 600 and already with this amount, the bottom of the bowl is almost completely covered. 20 ml of oil, heating level 4 and 20 minutes are the parameters to brown the floured parts, which does not succeed in this attempt: Only a few pieces are minimally browned, the rest pushes pale through the bowl. The result is mixed: The chicken pieces are not sautéed, a bit tough on top of that. The pieces of meat should, therefore, be much larger next time, approx.
Chicken skewers with pita
Last discipline: the grill function. The skewers of salad and pita bread from the recipe book page 68 look tempting. I cut the chicken into large pieces, about 4 x 4 cm, and marinate them as indicated. I put the pieces warm and lightly dabbed on wooden skewers, place them on the grill, select the grill program with level 4 and fold down the lid. After about 15 minutes I turn the skewers. At the end of the given time, the chicken parts are not browned yet appetizingly but already noticeably overgrown, as I add three more minutes for the look, the meat is completely dry.
